Jam Biscuits

  • 280g butter
  • 150g cast sugar
  • 380g plain flour
  • 1/2 tsp ground cinnamon
  • 60g ground almonds
  • 200g blackcurrant jam
  • 1 Egg
  • 1/2 tsp vanilla extract


Step 1

Preheat the oven to 170c Fan

Step 2

Cream the butter and caster sugar until light and fluffy.

Step 3

Add the flour, ground almonds, cinnamon and egg.

Step 4

Mix together until a dough forms. Rolls out the pastry until about 4mm / 1/4 inch thick

Step 5

Cut two circles per biscuit and every second circle cut out a smaller shape.

Step 6

Place each biscuit on a baking tray lined with parchment (you may need to cook them in batches.)

Step 7

Bake for 10mins Allow to cool.

Step 8

In a pan heat the Jam, allow to simmer then spoon about a teaspoon on to a whole biscuit and place a cut out biscuit on top to create a sandwich.

Step 9

Dust with a little icing sugar (optional)
