Coconut Bars

Ingredients

  • 160g desiccated coconut
  • 90g coconut oil
  • 30g agave syrup
  • 2 tbsp Ribena No Added Sugar Squash
  • 100g dark chocolate

Method

Step 1

Mix together 80g desiccated coconut, 40g coconut oil, and 30g agave syrup and press into a loaf tin lined with greaseproof paper.

Step 2

Transfer to the freezer for 5 minutes.

Step 3

Mix together 80g desiccated coconut, 40g coconut oil, and 2 tbsp Ribena No Added Sugar Squash

Step 4

Press the mixture on top of the bottom layer and freeze for 10 minutes.

Step 5

Melt the chocolate and remaining coconut oil.

Step 6

Slice the coconut layers into 8 bars using a sharp knife.

Step 7

Coat the bars in chocolate and then place in the freezer for 10 minutes.
