Blackcurrant Panna cotta

This delicious dessert is the perfect weekend treat. Try this Blackcurrant Pannacotta at home with the family.

  • 150ml Milk
  • 400ml Double cream
  • 3 sheets gelatine
  • 50g Sugar
  • 1 Vanilla pod

Coulis Ingredients

  • 600g blackberries
  • 50g sugar
  • 2 tbsp Ribena No Added Sugar Squash


Step 1

Add the milk, cream and sugar to a saucepan.

Step 2

Carefully slice the Vanilla pod down the middle and scrape out the seeds, add these to the pan. Gently heat this mixture until it simmers.

Step 3

Meanwhile, soak the gelatine sheets in a bowl of water according to the packet instructions. Then squeeze out the excess water.

Step 4

Take the pan off the heat and add the gelatine sheets and stir until they are fully dissolved.

Step 5

 Carefully pour into moulds and refrigerate.

Step 6

Add all the Coulis ingredients to a pan. Heat gently until the sugar dissolves. Then blitz with a handheld blender.

Step 7

Now you are ready to assemble. Place each mould into a bowl of hot water for 5 seconds. Place the upturned plate on top of the mould, flip over and then remove the mould. Top with a spoonful of coulis and garnish with mint leaves if desired.
