Summer Blackcurrant Ice Cream

Yes, I am so bored of the cold thatโ€™s been surrounding the UK for the past six months that I decided to mentally switch to warmer and sunnier weather.

All you need to make this delicious blackberry ice cream are 5 ingredients and 10 spare minutes๐Ÿ’๐Ÿผโ€โ™€๏ธ

6 hours for freezing


5 or more


  • 250ml Ribena Blackcurrant concentrate
  • 500ml double cream
  • 396ml condensed milk
  • 2 tbsp blackcurrant jam
  • 1 tsp pure vanilla extract


Step 1

Beat the double cream with a mixer until stiff peaks form.

Step 2

Turn the speed to low and slowly pour the condensed milk and add the vanilla.

Step 3

Split the mixture into two and add the Ribena concentrate to one as well as the blackcurrant jam.

Step 4

Gently fold both mixtures together in a freezer-safe container.
Donโ€™t overmix or you will lose the swirls.
Place in freezer

Step 5

Your ice cream will be ready in approx. 6hrs    

Serve ice cream topped with berries.
