Rhubarb and Blackberry Tart

This delicious tart is bound to make the family berry berry happy. Our Open Rhubarb and Blackberry tart is a quick sweet treat that is easy to whip up at home due to the use of the pre-made puff pastry.

  • 1 Packet of puff pastry
  • 4tbsp Sugar
  • 300g Blackberries
  • 300g Rhubarb
  • ½ Lemon
  • ½ tsp Vanilla Extract - lower case E on Extract
  • 25g Butter


Step 1

Preheat the oven to 200C. - missing degrees symbol after 200

Step 2

Carefully slice the Rhubarb into diagonal pieces.

Step 3

Squeeze half the lemon and add it into a bowl with the blackberries in with 1tbsp of sugar and stir.

Step 4

Add the vanilla extract and 2tbsp of sugar to the rhubarb, and stir until each piece is fully coated.

Step 5

Meanwhile roll out the puff pastry onto a floured surface and place on a baking tray.

Step 6

Arrange the rhubarb and blackberries in diagonal lines on the pastry. Or create a design of your own.

Step 7

Chop the butter into small cubes and scatter over the fruit with the remaining tbsp of sugar.

Step 8

Place in the oven for 15 minutes or until the pastry is puffed up round the edges and golden brown.

Step 9

Cool and enjoy by itself or with ice cream, cream or custard.
